Chocolate Coconut Ice Cream

Chocolate Coconut "Ice Cream"

1 can Thai Kitchen Coconut Milk (NOT the lite version), refrigerated for at least 1 hour
1-2 T. cocoa powder
1-2 T. sugar

Scoop the coconut solids out of the can into a bowl, leaving the watery part. Add cocoa powder and sugar to taste. Whip together for a minute adding the coconut water from the can as needed to make it fluffy. Eat as a pudding or freeze in individual bowls to make ice cream.

365 Challenge #233

Ok, this isn't the best picture because it was dark, and I had to use my flash. But, this is the best dish we've had in awhile! Those are shrimp, deliciously breaded, bang-bang shrimp. The recipe is here: Bang-bang Shrimp. One of our favorite restaurants is Bonefish Grill, but at over $20 a plate and the normal 45 minute wait even with a reservation, we've only been there twice (once while dating and once with a Christmas gift card). Our favorite appetizer at Bonefish is the bang-bang shrimp, so when I found this recipe, I was beyond excited! And sure enough, it tastes like the restaurant's.

The sauce was a little spicy for my preggo belly, so I only coated half of each shrimp. Also, my panko was a little course at first and was falling off the shrimp when I fried them, so I ground the panko in a ziplock bag, and everything went much smoother after that.

365 Challenge #220

I'd just like to write for a minute about how much I love our Amish store. It's just 3 miles away and SO cheap. I got all of this for $23.61. You have to shop carefully though, as a lot of the groceries in the store are expired (I don't mind buying a box of cereal that expired last month.....but you can find cereal that expired FOUR years ago in there).

Here is what I spent on each item:

Farm Fresh Eggs: $1.50
Tully's Coffee: $3.29
Green Mountain Coffee: 3.29
3 Candy Bars (for when Nate calls me and asks me to bring him a snack real quick): $1.00
Milo (haven't seen this since I was in the Philippines!): $2.07
1.75 lbs Pinto Beans: $1.35
Instant Coffee (for Black Bean Brownies): $1.81
1.75 lbs Cornmeal: $0.76
2 lbs Brown Sugar: $1.49
2 lbs Hamburger: $1.79 each
2 large cans Kidney Beans: $1.39 each
1 very large can Diced Tomatoes: $0.69

I added up what I would have approximately paid for these items at full price, and I would have spent about $59.50!! Although I already shopped here quite often, this trip has convinced me to try to do the majority of my grocery shopping here. It's definitely worth the extra time spent looking at expiration dates!

Lunch today

SO hungry today...and I didn't think I had much in the house as far as food went. Then I realized I had all the ingredients for this: Indian-spiced Roasted Chickpeas

I followed the recipe except for the coriander. I didn't actually have that.

Then, I realized I had all the ingredients for this: Naan Bread Recipe I just omitted the poppy seeds.

Then, I mixed about half a cup of plain yogurt with:
LOTS of dill (maybe a tablespoon)
Cilantro
Dash of cayenne pepper
Sprinkle of sugar
Cucumber would have been nice, but unfortunately, the cucumber was a moldy mush at the bottom of the vegetable drawer (like I said, there wasn't much to eat in my fridge).

Then I ate it all together.Wow. I need to open an Indian restaurant....or maybe just move to India. I don't even like chickpeas, but this was amazing!

And in case you don't have garam masala: Easy Garam Masala
