Chocolate Coconut Ice Cream

Chocolate Coconut "Ice Cream"

1 can Thai Kitchen Coconut Milk (NOT the lite version), refrigerated for at least 1 hour
1-2 T. cocoa powder
1-2 T. sugar

Scoop the coconut solids out of the can into a bowl, leaving the watery part. Add cocoa powder and sugar to taste. Whip together for a minute adding the coconut water from the can as needed to make it fluffy. Eat as a pudding or freeze in individual bowls to make ice cream.

Playing with Light

365 #27 I found them like this eating popsicles. And the light and setting couldn't have been more perfect! I love it when I don't even have to set up a shot...it's perfect just the way it is.
